Duck Neck Soup

Yesterday, I made falafel, thinking I'd use up the last of the cucumbers and yogurt and make a nice vegetarian meal today. However, this is most certainly not falafel weather. We've received something close to a foot of rain in the last 36 hours (I am not exaggerating here; thanks, Hurricane Ike!) and the humidity is sapping all our energy, and it's really a day for fuzzy socks and hot tea.

So I fished around in the back of the freezer and found the duck neck and wings from the duck I made last spring, along with a lovely container of stock leftover from its initial parboiling. It's currently boiling itself up into a lovely, fatty broth, to which I will add some blackeyed peas, celery, onion and leftover chicken breast.

Now that's more like it.
